Green Banana (Matooke) Experience – Harvest, Cook & Taste Uganda’s Staple Tradition

Deep in the fertile highlands surrounding Mount Elgon, green banana—locally known as matooke—is more than food. It is the heartbeat of daily life, a cultural identity, and a shared language of hospitality across Uganda, often referred to as the “matooke republic.” In the Sipi region near Sipi Falls, this tradition is not only preserved but lived every day. Our Green Banana Experience is a half-day immersive journey that takes you from plantation to plate. You begin in the lush banana gardens where towering green banana plants dominate the landscape. Guided by local hosts, you’ll learn how matooke is cultivated, selected, and harvested using traditional methods passed down through generations. The experience becomes truly hands-on as you select your own bunch, cut it down from the garden, and carry it through the process of peeling, wrapping, and preparing it for cooking. Using age-old techniques—often involving steaming over banana leaves—you’ll discover how simplicity transforms into deeply satisfying flavor. The highlight of the experience is the shared meal. After preparation, you sit together and enjoy the very dish you helped create, served the traditional way and accompanied by stories, laughter, and cultural insight from your hosts.
